Ingredients

  • 4 large eggs
  • 1 ripe avocado
  • 2 slices sourdough or whole grain bread
  • 1 tablespoon butter or olive oil
  • 1/4 cup cherry tomatoes, halved
  • Everything bagel seasoning
  • Red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh microgreens or arugula

Instructions

  1. Toast bread until golden and crispy.
  2. Halve the avocado and smash each half onto a slice of toast with a fork. Season with salt, pepper, and a squeeze of lemon.
  3. Heat butter in a non-stick skillet over medium heat.
  4. Crack 4 eggs into the pan. Cook to your preference — sunny side up (3 minutes), over easy (flip and cook 30 seconds), or scrambled.
  5. Place eggs on top of the avocado toast.
  6. Top with cherry tomatoes, microgreens, everything bagel seasoning, and red pepper flakes.
