These turkey smash burgers are crispy on the outside, juicy on the inside, and pack 38g of protein with nearly half the fat of a regular beef burger. The smash technique creates an incredible caramelized crust that makes lean turkey taste anything but boring.

The Secret to Great Turkey Burgers

Most turkey burgers fail because they are overworked and cooked too long. The smash burger method solves both problems. You form loose balls, smash them thin on a screaming hot surface, and cook them fast. The result is a crispy, flavorful patty that holds together perfectly.

Ingredients

  • 1 lb ground turkey (93% lean)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 slices pepper jack cheese
  • 4 whole wheat brioche buns
  • Lettuce, tomato, pickles, red onion
  • Sriracha mayo (mix sriracha with light mayo)

Instructions

  1. Mix ground turkey with garlic powder, onion powder, smoked paprika, salt, and pepper. Do not overwork.
  2. Divide into 4 equal balls (about 4 oz each).
  3. Heat a cast iron skillet or flat griddle over high heat until smoking.
  4. Place a ball on the surface. Immediately smash flat with a sturdy spatula or burger press.
  5. Cook 3 minutes until edges are deeply browned and crispy. Flip.
  6. Add cheese immediately. Cook 2 more minutes.
  7. Toast buns on the griddle. Assemble with sriracha mayo, lettuce, tomato, pickles, and onion.
